Making Almond Milk

Buying almond milk can be expensive, and many brands contain unwanted ingredients. As with much of our food supply these days, small successful companies are being bought out by larger companies more concerned with a bottom line than with quality and integrity. See the resources listed below about some of the controversy regarding almond milk suppliers.

Aside from quality, homemade almond milk is so much creamier and tastier than the store-bought varieties. Almond milk is not difficult to make, so why not make your own?

You will need:

Making almond milk is a lot easier than you might imagine, and it tastes so much better than store-bought! Let me show you how to make almond milk at home in four easy steps.

blender
cheesecloth or a reusable nut milk bag
1 cup raw organic almonds
4 cups of water
2 tablespoons of honey or maple syrup
½ teaspoon of almond extract
1/2 teaspoon vanilla extract
1/2 teaspoon salt

Step One:
Soak the almonds in water overnight.

Step Two:
Drain and rinse the almonds, then add 2 cups of fresh water and blend on high-speed for 1-2 minutes (time will vary depending on your blender).

Step Three:
Add your honey or maple syrup, vanilla, almond extract and salt and blend for a few more seconds.

Step Four:
Line a bowl with cheese cloth and carefully pour the blender contents into the cheese cloth or your reusable nut milk bag. Gently squeeze out the almond “milk”. Store in a clean, airtight container. We use large mason jars. Use within 7 days.

Tasty and Nutritious

Almond milk has a light feel to it, difficult to describe. Why use almond milk, especially if you are not milk intolerant or a vegan? Almonds are a healthy addition to a simple and natural foods diet. In addition to the fiber content of almonds, they also include healthy phytochemicals, calcium, phosphorus, zinc, magnesium, potassium, and iron. Almonds are high in vitamin E, a powerful antioxidant.

One ounce of almonds (about 23 almonds) has about 160 calories, 6 grams of protein, polyunsaturated and monounsaturated fats.

Enjoy your homemade almond milk as a tasty protein-rich drink, or added to recipes in place of dairy milk. I enjoy mine with homemade granola and added to smoothies.
